The intense purple of blackberries and blueberries, the vibrant green of zucchini: August is a month of abundant flavors and colors.

August is also when solanaceae ripen and are ready to be harvested, including potatoes, peppers, eggplants and obviously our very own Pomì tomatoes.

Fresh, colorful and thirst-quenching, summer vegetables become our allies against the heat, helping us to rehydrate our organism. What could be better than a healthy and delicious summer meal to feel good and regenerate body and mind in the searing August heat? We can use seasonal fruits and vegetables of August to create lots of good and healthy recipes.

Cucumbers

Lightness, freshness and richness in water. All fundamental characteristics of a major summer ingredient: the cucumber. Thanks to its high water content - approximately 95% - it helps to hydrate body and skin. But there's more: cucumbers are rich in potassium, phosphorous and vitamins, vitamin C and vitamin K in particular. Cucumbers are delicious enjoyed alone, seasoned with a sprinkle of salt and a drizzle of oil, as well as in salads, fresh sauces and in mixed fruit juices.  Cucumbers are also used to make a fantastic light cream that is velvety, nourishing and bursting with flavor: perfect served alone but also delicious on toasted bread, with a special final touch of homemade yogurt sauce!

Eggplants

Any summer cart brimming with simple and genuine ingredients, perfect for creating lunches en pleine air and dinners in company, will always contain eggplants, the star ingredient of a great classic parmigiana, as a condiment in the typical Sicilian dish pasta alla norma or simply fried or lightly grilled.

Of all vegetables, tomato is perhaps its most natural companion in the creation of summer recipes. Our favorite? Bruschetta with eggplant and Pomì tomato cream.

Peppers

Bursting with vitamin C - when raw they contain even more than citrus fruits -  peppers are rich in nourishing and beneficial elements: antioxidants, betacarotene, potassium, iron, magnesium, and calcium are just some of the nutrients these colorful vegetables have. Not to mention vitamin E as well as high levels of fiber and water. Low in calories and refreshing, we pair them with zucchini - another star of the summer - in this summer caponatina with tomato sauce.
